Ingredients (Serves 4–6)
- 1 kg potatoes, peeled and cut into chunks
- ½ medium cabbage (about 400 g), finely shredded
- 1 large onion, finely chopped
- 50 g butter (plus extra for greasing)
- 100 ml milk
- 150 g cheddar cheese, grated
- 1 teaspoon salt
- ½ teaspoon black pepper
- Optional: a pinch of nutmeg
Method
Step 1: Prepare the potatoes
- Place the potatoes in a large pot of salted water.
- Bring to a boil and cook for 15–20 minutes, or until tender.
- Drain well and return them to the pot.
Step 2: Cook the vegetables
- While the potatoes are cooking, melt half of the butter in a large pan.
- Add the chopped onion and cook over medium heat for 5–7 minutes until soft.
- Add the shredded cabbage and cook for another 5–8 minutes, stirring occasionally, until tender.
Step 3: Make the mash
- Add the remaining butter and milk to the potatoes.
- Mash until smooth and creamy.
- Season with salt, pepper, and nutmeg if using.
Step 4: Combine everything
- Add the cooked cabbage and onions to the mashed potatoes.
- Mix thoroughly until evenly combined.
Step 5: Bake
- Preheat the oven to 200°C (180°C fan) / 400°F.
- Lightly grease a baking dish.
- Transfer the potato mixture to the dish and spread evenly.
- Sprinkle the grated cheddar cheese over the top.
Step 6: Finish
- Bake for 20–25 minutes, or until the cheese is melted and golden brown.
- Remove from the oven and let stand for a few minutes before serving.
