Southern Sausage Biscuits

Southern Sausage Biscuits are a true comfort-food classic, rooted deep in Southern kitchens and breakfast tables. Simple, hearty, and incredibly satisfying, this dish is all about rich flavors and warm, homemade goodness. Fluffy, buttery biscuits paired with savory sausage create a meal that’s both filling and nostalgic. Whether served plain, split and stuffed with sausage, or smothered in creamy gravy, sausage biscuits are a go-to breakfast that never goes out of style.

What makes Southern sausage biscuits so special is the contrast in textures. The biscuits are tender and flaky, with golden edges that melt in your mouth, while the sausage brings bold, seasoned flavor with a juicy bite. Using buttermilk in the biscuits adds a subtle tang that balances the richness of the sausage. This recipe is perfect for slow weekend mornings, family breakfasts, or make-ahead meals you can reheat during busy weekdays.

Ingredients

For the Biscuits

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

6 tablespoons cold butter, cubed

3/4 cup cold buttermilk

For the Sausage

1 lb breakfast sausage (patties or bulk)

Instructions

Preheat oven to 425°F (220°C). In a bowl, whisk flour, baking powder, baking soda, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in buttermilk just until combined. Turn dough onto a floured surface, gently pat to about 1-inch thickness, and cut biscuits. Place on a baking sheet and bake for 12–15 minutes until golden.

While biscuits bake, cook sausage in a skillet over medium heat until browned and fully cooked. Split warm biscuits and serve with sausage inside or alongside. Enjoy hot for the best flavor and texture.
