½ tsp salt
½ cup (115g) cold unsalted butter, cubed
¾ cup (180ml) cold heavy cream, plus more for brushing

Step-by-Step Instructions

1. Prepare the Berries
Combine berries with sugar and lemon juice.
Set aside at room temperature for 30 minutes or longer.

2. Make the Shortcakes
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Whisk together flour, sugar, baking powder, and salt.
Cut in the butter until the mixture resembles coarse crumbs.
Stir in the cream just until a shaggy dough forms.
Pat dough into a 1-inch thick round and cut into 6–8 biscuits.
Transfer to baking sheet, brush with cream, and sprinkle with sugar.

3. Bake
Bake for 14–16 minutes, until golden brown.
Cool for about 5 minutes.

4. Whip the Cream
Beat cream, powdered sugar, and vanilla until soft peaks form.

5. Assemble and Serve
Slice biscuits in half.
