We have always loved experimenting with cheesecake flavors, from Strawberry Cheesecake to Pumpkin Cheesecake. This Lemon Cheesecake is really a cross between a classic New York Cheesecake and Lemon Bars – it’s a must-try!

Ingredients
You’ll need:

Graham cracker crumbs – 2 cups (200 g) πŸͺ
Unsalted butter, melted – Β½ cup (115 g) 🧈
Granulated sugar – 2 tbsp (25 g) 🍬

For the Filling:
Cream cheese, softened – 16 oz (450 g) πŸ§€
Granulated sugar – ΒΎ cup (150 g) 🍬
Eggs – 3 large πŸ₯š
Sour cream – Β½ cup (120 g) πŸ₯›
Fresh lemon juice – β…“ cup (80 ml) πŸ‹
Lemon zest – 1 tbsp πŸ‹
Vanilla extract – 1 tsp 🌿
All-purpose flour – 1 tbsp 🌾

1️⃣ Preheat oven to 325Β°F (165Β°C) and grease a 9-inch springform pan πŸ”₯
2️⃣ In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined πŸͺ🧈
3️⃣ Press mixture firmly into the bottom of the pan to form the crust
4️⃣ Bake crust for 8–10 minutes, then let it cool slightly ✨
