This is the ultimate comfort food mashup: savory, meaty sloppy joe filling loaded with melted cheese, piled onto buttery, crispy garlic Texas toast. It’s messy, indulgent, and absolutely delicious.

Ingredients

For the Sloppy Joe Filling:

  • 1.5 lbs (680g) ground beef (80/20 blend for best flavor)
  • 1 medium yellow onion, finely diced
  • 1 medium green bell pepper, finely diced
  • 3 cloves garlic, minced
  • 1 cup ketchup
  • ½ cup tomato sauce or crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 tablespoon brown sugar or honey (optional, for balance)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ cup beef broth or water
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

For Assembly:

  • 8 slices thick Texas toast or brioche bread
  • ½ cup (1 stick) unsalted butter, softened
  • 3 cloves garlic, minced or grated
  • 2 tablespoons finely chopped fresh parsley (optional)
  • 2 cups shredded cheese (a mix of cheddar, Monterey Jack, and/or pepper jack)
  • Optional toppings: pickle slices, sliced jalapeños, crispy onion strings, extra parsley

Instructions

1. Make the Garlic Texas Toast

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a small bowl, mix softened butter, minced garlic, and parsley until combined.
  • Spread the garlic butter generously on one side of each bread slice.

2. Cook the Sloppy Joe Filling

  • Reduce heat to low and simmer for 15-20 minutes, stirring occasionally, until thickened but still saucy. Taste and adjust seasoning.

3. Assemble & Melt the Cheese

  • Place the toasted garlic bread slices on the same baking sheet (buttered-side up).
  • Spoon a generous amount of sloppy joe filling onto each slice, spreading to the edges.
  • Pile shredded cheese evenly over the top of each.
  • Place under the broiler for 2-4 minutes, watching closely, until cheese is completely melted and bubbly.

4. Serve Immediately

  • Carefully transfer each cheesy sloppy sandwich to a plate.
  • Top with optional pickles, jalapeños, or onion strings.
