Bacon Cheeseburger Casserole

This recipe takes juicy ground beef, crispy bacon, melted cheese, and savory seasonings and layers them into a comforting, cheesy casserole that’s perfect for family dinners, game-day gatherings, or any time you’re craving the ultimate comfort food. It’s the kind of meal that satisfies every craving at once — salty, cheesy, meaty, and oh-so-delicious.

Ingredients

2 tablespoons sugar-free ketchup
1 tablespoon olive oil
3 oz cream cheese softened
1 ½ lbs ground beef
2 large eggs
½ cup chopped onion
⅓ cup heavy whipping cream
1 teaspoon oregano
2 cups shredded cheddar cheese divided
2 teaspoons minced garlic
½ cup dill pickle slices
2 teaspoons Worcestershire sauce
½ cup cooked bacon pieces
Salt and pepper to taste

Method

Preheat and prep:
Preheat your oven to 400°F (200°C) and lightly spray a 9×13-inch baking dish with cooking spray.
Cook the beef:
Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and chopped onions, sautéing until the beef is fully cooked and the onions are softened. Drain any excess fat.
Add flavor and creaminess:
Stir in the Worcestershire sauce, minced garlic, cream cheese, oregano, sugar-free ketchup, and salt and pepper. Continue to cook, stirring until the cream cheese melts and the mixture is smooth and well combined.
Layer the casserole:
Spread the beef mixture evenly in the prepared baking dish.
Prepare the custard layer:
In a medium bowl, whisk together the eggs, 1 cup of shredded cheddar cheese, and the heavy whipping cream. Pour this mixture over the meat layer in the casserole dish.
Add toppings:
Arrange the dill pickle slices evenly over the custard layer. Sprinkle the remaining 1 cup of cheddar cheese and the cooked bacon pieces on top.
Bake:
Place the casserole in the preheated oven and bake for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden.
Serve:
Remove from the oven and let cool for a few minutes before serving. This casserole is best enjoyed warm, straight from the dish.
