Easy Chili Rellenos Casserole — cheesy, mild-pepper comfort food

A comforting and flavorful casserole dish that combines the mild heat of roasted peppers with gooey melted cheese, perfect for a cozy family meal or entertaining guests.

Ingredients

  • Mild peppers (such as Anaheim or poblano)
  • 4 eggs
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • Optional: diced onions, garlic, ground meat

Directions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Roast the mild peppers until the skins blister, then peel, remove seeds, and cut into strips.
  3. In a bowl, whisk together eggs, milk, flour, baking powder, and salt to create a batter.
  4. Layer the pepper strips in the greased dish and pour the batter over them.
  5. Top the casserole with shredded cheese and any optional ingredients you desire.
