Step 1: Prepare the Base
Preheat the oven to 180Β°C / 350Β°F.
Separate the egg whites and yolks into two bowls.
In the bowl with the yolks, add:
- Cream cheese
- Mustard
- Heavy cream
Whisk until smooth and creamy.
Gently mix in:
- Crab meat
- Smoked salmon
- Chives
- Lemon zest
Season lightly with salt and pepper.
Step 2: Fold in the Egg Whites
Whip the egg whites with a pinch of salt until stiff peaks form.
Using a spatula, gently fold the egg whites into the mixture, lifting carefully to keep it light and airy.
Step 3: Bake
Pour the mixture into a log mold or loaf pan lined with parchment paper.
Bake for 30β35 minutes, until set but still moist.
Let cool slightly, then carefully unmold and allow to cool completely.
