When she finally shared her “secret,” I had to laugh: just three everyday ingredients, baked up into juicy, savory mouthfuls that taste like something you’d order from a good diner, only they’re low carb and far cheaper than takeout. They remind me of the kind of hearty, no-fuss food I grew up with in the Midwest—ground beef, sharp cheese, and a simple seasoning blend doing all the heavy lifting.

Serve these cheddar beef bites hot on a simple platter with toothpicks for easy grabbing. Low Carb Cheddar Beef Bites

1 pound ground beef (80% or 85% lean)

1 1/2 cups shredded sharp cheddar cheese, divided

2 tablespoons dry onion soup mix

Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or lightly grease it so the bites don’t stick.

In a medium mixing bowl, combine the ground beef, 1 cup of the shredded sharp cheddar cheese, and the dry onion soup mix.

Using clean hands, gently mix until the seasoning and cheese are evenly distributed through the beef. Don’t overwork the meat; stop as soon as everything looks well combined.

Pinch off small portions of the mixture and roll or press them into balls or slightly flattened mounds, about 1 to 1 1/2 tablespoons each. Place them on the prepared baking sheet, leaving a little space between each one so they can brown.

Bake on the middle rack for 10–12 minutes, or until the beef bites are mostly cooked through and the edges are starting to brown. If a lot of fat collects on the pan, carefully tilt and spoon off some of it.

Sprinkle the remaining 1/2 cup shredded sharp cheddar cheese evenly over the tops of the beef bites. Return the pan to the oven and bake for another 3–5 minutes, just until the cheese is melted, gooey, and starting to bubble and stretch.

Remove from the oven and let the bites rest on the pan for about 5 minutes. This helps the juices settle and the cheese set slightly so they’re easier to pick up.
