Mom’s Marinated Salad

Salad
  • 2 (15 oz) can green beans, drained
  • 2 (15 oz) cans green peas, drained
  • 2 (15 oz) can sweet corn, drained
  • 1 (2 oz) jar pimentos with oil
  • 2 stalks celery, finely diced
  • 1 green bell pepper, diced
  • ½ white onion, diced
Dressing
  • 3/4 cup granulated sugar
  • 3/4 cup white wine vinegar
  • 1/2 cup olive oil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon onion powder
Preparation
  1. In a small bowl, whisk together all dressing ingredients until well combined.
  2. Add all salad ingredients to a large bowl and pour dressing over the top.
  3. Toss salad until all ingredients are well coated.
  4. Cover and chill for 8 hours or overnight. Stir after a few hours if possible.
  5. Serve chilled.
