This Slow Cooker Baked Broccoli and Cheese Casserole is my way of keeping that tradition alive. It’s rich, creamy, and perfectly cheesy, with tender broccoli and a buttery, crispy topping that’s irresistible. Best of all, it’s effortless—just a little prep, and the slow cooker does the rest, giving you time to enjoy the moments that matter most.
Ingredients
4 cups fresh broccoli florets (or frozen, thawed)
1 can (10.5 oz) condensed cream of mushroom or cream of chicken soup
1 cup sour cream
2 cups shredded cheddar cheese, divided
1/2 cup crushed buttery crackers (like Ritz)
1/4 cup butter, melted
1/2 tsp garlic powder
Salt and pepper, to taste
Instructions
Lightly grease the inside of your slow cooker.
In a large bowl, combine soup, sour cream, 1 1/2 cups cheese, garlic powder, salt, and pepper. Stir in broccoli until coated.
Transfer mixture to the slow cooker and spread evenly.
In a small bowl, mix cracker crumbs with melted butter. Sprinkle over the top.
Cover and cook on low for 3–4 hours, or until broccoli is tender and the casserole is heated through.
Sprinkle remaining cheese on top during the last 10 minutes of cooking, letting it melt before serving.
Note: This casserole is just as good the next day—if you’re lucky enough to have leftovers. Try pairing it with roast chicken, baked ham, or even a simple green salad for a complete comfort meal. And if you want to make it extra special, swap the cheddar for a sharp white cheddar or add a sprinkle of Parmesan to the topping before serving.
