Yield and Timing

Serves 6–8 people
Prep time: 15 minutes
Cook time: 7–8 hours on LOW or 4–5 hours on HIGH

Ingredients

  • 2 pounds cubed beef stew meat
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 4 medium potatoes, peeled and chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon Worcestershire sauce
  • Optional: 1 cup frozen peas (added near the end)

Preparation

Pat the cubed beef dry and season with salt, pepper, and paprika. Toss lightly with flour.

In a skillet over medium-high heat, heat olive oil and sear the beef on all sides until browned. This step adds extra flavor but can be skipped if short on time.

Transfer the beef to the slow cooker.

Add potatoes, carrots, celery, onion, and garlic.

In a bowl, whisk together beef broth, tomato paste, thyme, rosemary, and Worcestershire sauce. Pour over the ingredients in the slow cooker.

Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender.

If using frozen peas, stir them in during the last 20–30 minutes of cooking.

Taste and adjust seasoning before serving.
