3 tbsp unsweetened applesauce
¼ cup zero-calorie sweetener (Swerve, Monk Fruit, etc.)
1 tsp vanilla extract
1 egg white
Pinch of salt
🍪 Instructions
- Make the dough
In a bowl, cream together light butter + sweetener.
Add egg white, vanilla, and applesauce and mix until smooth.
Add flour + salt and mix until soft dough forms.
- Shape the cookies
Chill dough for 20 minutes (helps low-fat dough hold shape).
Roll into 20 small balls and flatten slightly with fingers or fork.
- Bake
Preheat oven to 350°F (175°C).
Bake 8–10 minutes until edges are lightly golden.
Cool before removing from tray.
