Slow Cooker Loaded Potato Skins

Servings: 6

Ingredients

6 medium russet potatoes
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1/4 cup chopped green onions
Sour cream for serving (optional)

Directions

Wash and scrub the potatoes thoroughly. Pat them dry with a towel.

Rub each potato with olive oil, then sprinkle with salt and pepper.

Place the potatoes in the slow cooker. Cover and cook on high for 4-5 hours or until the potatoes are tender.

Once cooked, remove the potatoes and let them cool slightly. Cut each potato in half lengthwise and scoop out most of the flesh, leaving a thin layer inside the skins.

Preheat your oven to 400°F (200°C).

Place the potato skins on a foil-lined baking sheet. Sprinkle the inside of each skin with cheddar cheese and bacon.

Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.

Remove from the oven and sprinkle with chopped green onions. Serve warm with a dollop of sour cream if desired.

Variations & Tips

For a vegetarian version, omit the bacon and add sautéed mushrooms or roasted red peppers. You can also experiment with different cheeses like pepper jack for a spicy kick or gouda for a smoky flavor.
